Lunch Idea 2

This morning I woke up to everything covered in snow and it really felt like winter. I have to study for my exams but snow makes me feel cozy and inspires me to cook warm, comforting foods.




So here is my lunch; pasta with a veggies, soy mince and tomato sauce. Such a hardy meal!

All you need to do is prepare the sauce by roughly chopping some veggies of your choice (I used zucchini, multicolored peppers, onions and carrots) and putting them in a hot pan with just a bit of water so they don't stick, salt, and extra virgin olive oil. Once they're becoming to soften a little, add the soy mince, give a quick stir, put the tomato passata and some mexican salsa. Boil and drain your pasta, and sautee it with the sauce for a minute, serve and enjoy.


This meal is very satisfying and healthy because it provides you with vitamins from the veggies, carbs from the pasta, and protein from the soy mince. Plus it's so comforting and spicy from the tomato sauce!

I used 60 grams of whole wheat pasta, 50 grams of frozen soy mince, half a cup of tomato passata, 2-3 teaspoons of mexican salsa, and unlimited veggies.

Lunch Idea 1


Here is what I ate today for lunch.
It was a pretty hot day for being winter so I decided to prepare this fresh whole wheat pasta with arugola, tomatoes and mozzarella.

Quick, easy and delicious!

All you have to do is boil the pasta until it's al dente, drain it throw it in the bowl where you've but the arugola together with the chopped tomatoes and mozzarella, add a teaspoon of extra virgin olive oil and you're set!

This lunch is well balanced and completely provides you with vitamins from the veggies, carbs from the pasta and protein from the cheese.

I used 60 grams of pasta, 1 mozzarella(100g), and unlimited veggies.

Hi everyone!

My name is Barbara and I'm an Italian college student. So be nice and excuse my English please.

I usually spend my days at the University and when I finally get home I like to experiment in the kitchen. Yes, food is one of my biggest passions.

I would say I follow a plantbased flexitarian diet, so my main income of calories and nutrients come from cereals, vegetables, fruit, legumes and meat substitutes such as tofu, seitan or tempeh, but I occasionally consume fish and non-fat cheese like mozzarella.

I'd love for this blog to inspire you to have a healthy lifestyle but full of tasty food!
